Easy Easter Treats to Make with Kids: Rocky Road with Mini Chocolate Eggs

This Rocky Road recipe has had the ultimate Easter makeover with the addition of chocolate mini eggs! Perfect nibbles for snack time and the best accompaniment to a cup of tea, these choco delights will be gone before you know it.
Makes: 15-20 pieces
Ingredients
175g/6oz dark chocolate (broken into pieces)
125g/4½oz milk chocolate (broken into pieces)
2 tbsp golden syrup
75g/2¾oz unsalted butter (diced up)
160g/5¾oz sugar-coated mini chocolate eggs
200g/7oz digestives or rich tea biscuits (broken into pieces)
75g/2¾oz mini marshmallows
50g/1¾oz hazelnuts (chopped roughly)
75g/2¾oz raisins
Method
Start off by lining a 20x30cm/8x12in baking tin with baking paper. The little ones can help by cutting out the baking paper and spreading butter on the tin so the paper can stick well.
Next pop the dark and milk chocolate into a heatproof bowl along with the golden syrup and butter. To melt all the ingredients together place the bowl over a saucepan of simmering water, making sure the bottom of the bowl doesn’t touch the water. Stir occasionally until everything has combined well and is smooth. Then you can remove from the heat and allow it to cool for around 5 minutes. (Although it may bet tempting to just move onto the next steps straight away, if the chocolate is too hot when you add the marshmallows they will melt, so it’s definitely worth waiting just a little bit).
The I6456C is the perfect induction hob this Easter since its Soft Melt perfect for melting chocolate without it burning. This is because it maintains a constant temperature of 42 degrees Celsius!
Whilst the chocolate is cooling you can begin to cut the chocolate mini eggs in half. Put aside one third of the eggs, including some whole ones for decorating.
Then you can gently incorporate the chocolate eggs, biscuits, marshmallows, nuts and raisins into the melted chocolate.
The kids can help here by spooning the mix into the tin and spreading it so it’s nice and even. They can then decorate with the mini eggs, making whichever design they like!
Refrigerate for at least 1 hour or until everything is firm, then just cut into bitesize pieces ready to eat. The RS818 has incredible features such as Metal Cooling which means cool air is distributed evenly, so wherever you place the Rocky Road it will chill to perfection.
