Scrumptious Wensleydale Scones

Whet your appetite with these super simple and delicious Wensleydale Scones. Wensleydale cheese is Yorkshire through and through, so much so that it has a Protected Geographical Indication certificate from the European Union! This unique and flavoursome cheese is the creation of French monks that settled in Lower Wensleydale during the 1150’s, and people all over the world have been enjoying it ever since. Moving with the times, this cheesy scone recipe will have you coming back for bite after bite.

 

Ingredients:

400g self-raising flour

80g butter (chilled and cut into cubes)

150g Wensleydale (grated)

1 tsp English mustard powder

1/2 tsp cayenne pepper

200ml warm milk

 

Method:

As with most recipes, step one is to preheat the oven to 220C/fan200C/gas7. If you do forget or simply just like to live on the edge, the BI64211PB’s convenient 5-minute preheat feature has got your back. Just wait for the light and sound signal to alert you that the temperature has been reached and pop the food right in.

In a food processor add the flour and butter along with ½ tsp salt. Pulse until the mix looks like breadcrumbs.

Take the mix to a large bowl and add in the cheese, mustard and cayenne. Slowly add the milk to form a soft dough.

Top Tip: Make sure not to over knead the dough or your scones will be tough, and nobody wants tough scones ruining Yorkshire Day

 

On a floured workspace, gently pat out the dough and cut into rounds or diamonds depending on your preference.

 

Brush with milk and since you can never have too much cheese, add a generous sprinkle of grated Wensleydale.

Your Perfect Yorkies

 

Nothing beats a warm and hearty roast dinner, and they’re a Yorkshire crowd favourite. Whichever meat does it for you, no roast is complete without warm, buttery Yorkshire Pudding’s crowning the side of the plate. Here’s a tantalizing recipe to try at home that will definitely keep everyone satisfied. But we won’t judge if you opt for frozen Yorkies, which will be just as crispy thanks to the BI64211PB’s Frozen Bake mode.

 

Ingredients:

150g plain flour, sifted

6 eggs

275ml milk

oil or dripping

a good pinch of salt

 

Method:

Once again, make sure your oven is preheated to 220C/fan 200C/gas 7. This step is easy to forget when the thought of Yorkies is hot on your mind, that’s why the BI64211PB’s convenient 5-minute preheat feature is a total game changer.

 

Next, sift the flour into a bowl and make a well in the centre by gently pushing the flour out. Then, stir in the eggs and milk until the batter is smooth. Make sure to season with a good pinch of salt!

 

Now place an empty tray into the oven for 3 minutes to heat up. After this, remove them and add a drop of olive oil or dripping. Keep in the oven until you see that the oil is smoking hot.

 

Add in the batter so the tins are half full and pop back into the oven to cook for 10 minutes. After 10 minutes, turn the oven down to 180C/fan 160C/gas 4 and cook for a further 10 minutes.

The colloquially labelled Yorkshire Rhubarb Triangle is a majestic 9 square mile patch of rhubarb, which qualifies it as a true Yorkshire delight. Since its 1877 origins in Yorkshire to today, there have been an abundance of ways to enjoy rhubarb, but with the BI64211PB, this crumble is an unmissable option.

 

Ingredients:

400g rhubarb (chopped into 3cm pieces)

a pinch ground star anise

a pinch ground ginger

150g golden caster sugar

1 orange (zested)

 

Crumble:

150g plain flour

150g butter

100g porridge oats

150g demerara sugar

a pinch ground cinnamon

to serve fresh custard

 

Method:

For this recipe, preheat the oven to 180/fan 160C/gas 4 and if you’re in a hurry make use of the BI64211PB’s convenient 5-minute preheat feature here.

Place the rhubarb, spices, sugar, and orange zest in a pan. Cook them gently until they’re all soft to the touch. Allow to cool slightly and add them to your baking tray.

In a separate bowl rub together the flour and butter until the mix resembles breadcrumbs. Then you can stir in the oats, cinnamon, and sugar.

Loosely spoon this mix on top of the fruit.

Top Tip: Don’t press the crumble down too hard or the fruits won’t cook as well

Bake the crumble for 20-30 minutes or until the top is crisp and golden. Here would be the perfect time to activate the Gratin Function, which uses a high-powered grill to make your crumble extra crunchy on top.

 

We recommend serving with custard, but feel free to crumble your way.
