When the nights start to get dark and the air crisp, there’s nothing quite like having something warm something waiting for you in the oven, and this classic Yorkshire treat is the perfect thing for those cosy nights. Once you try this Parkin recipe, trust us you’ll be whipping it up whenever you get the chance. Rest assured, with the incredible features of the BSA66346PDBGUK, such as its huge 77 capacity, you won’t be trapped in the kitchen missing out on the Bonfire fun!
Parkin is the historic creation of working-class people from Northern England, who certainly knew what they were doing in the kitchen. Dating back to the 18th century, this gingerbread cake was a cheap and filling dessert that could be made with easily accessible ingredients. Even after all this time it is still very much enjoyed, and its simplicity means it’s never too much work to be enjoyed.
Ingredients
200g butter, plus extra for greasing
1 large egg
4 tbsp milk
200g golden syrup
85g treacle
85g light soft brown sugar
100g medium oatmeal
250g self-raising flour
1 tbsp ground ginger
Method
Preheat your oven to 160°C (or 140°C if you’re using a fan oven, or Gas Mark 3 if you prefer).
Next, prepare your cake tin by generously coating with butter, ensuring it’s well-greased, and line it with parchment paper.
Then, take an egg and some milk and beat them together using a trusty fork.
In a spacious pan, gently melt the syrup, treacle, sugar, and butter until the sugar completely dissolves. Once the sweetness is perfectly combined, remove the pan from the heat.
In a separate bowl, combine oatmeal, flour, and ginger. Gradually introduce this dry mix into the syrup blend. Follow it up with the egg and milk mixture. This creates a wondrous batter that will be the heart of our Parkin.
Pour this delightful batter into the prepared cake tin, and let the magic unfold in the oven. Baking is very rarely a clean affair so whether your hands are covered in batter or there’s flour here, there and everywhere, the easy-to-use Icon LED full touch control buttons on the BSA66346PDBGUK will make your life a doddle.
Bake for 50 minutes to 1 hour, or until the cake presents a firm, slightly crusty top. Why not try enabling the Steam Add Plus feature which uses the power of steam to circulate hot air evenly and equally. No soggy bottoms here please!
Thanks to ConnectLife, you can monitor the progress of the cooking, which means you’re not stuck in the kitchen whilst everyone else is out and enjoying the fireworks. Plus, the impressive 77l capacity gives you the flexibility to tailor how much or little you want to make this bonfire night.
Once the cake has achieved its cake-ly perfection, allow it to cool right in the tin. Then, wrap it up with more parchment and foil to preserve its deliciousness.
If you have the patience, store it for up to five days before indulging. The longer you leave it, the more the Parkin will become softer and stickier, reaching its peak in two weeks. It’s worth the wait!
No one wants to be scrubbing leftovers from the oven whilst everyone else is lighting their sparklers, but thanks to the Pyrolytic Clean setting on the BSA66346PDBGUK, you don’t have to worry about missing out. Simple just let the oven blast away the dirt and grime and wipe off the ash in seconds!
